Gluten-free kataifi: what it is, how it is made and how to use it

Kataifi, also known as kadayif or “angel hair” pastry, is a dough of very fine threads used across Greek, Turkish and Middle Eastern pastry. More and more pastry shops, restaurants and home cooks ask the same question: is kataifi gluten free, and if not, is there a version that is? This guide gives a clear answer, explains how our gluten-free kataifi is produced and shows how to work with it in a professional kitchen.

Is kataifi gluten free?

No. Classic kataifi is made from wheat flour, so it contains gluten. Our regular raw kataifi dough and roasted kataifi list gluten (wheat) as an allergen, and they may also contain traces of milk, nuts and eggs. If you want to learn more about the traditional product itself, read our guide what is kataifi.

Who looks for gluten free kataifi?

Demand comes from several groups:

  • people with coeliac disease or gluten intolerance who want to enjoy kadayif desserts again;
  • guests who simply avoid gluten and look for gluten-free options on a menu;
  • gluten-free bakeries and pastry shops that want to add a Middle Eastern classic to their range;
  • restaurants, hotels and caterers that need one dessert or starter suitable for mixed groups.

If you serve customers with coeliac disease, ask us for the lab tests and declarations before you put the product on your menu. You know your own kitchen best, so also check how you store, prepare and bake the dough.

How our gluten-free kataifi is made

Kataifi Factory EU produces kataifi in Oborniki Śląskie, Poland. Our gluten-free kataifi is produced on a separate gluten-free line, not on the line used for wheat dough. It is baked to a golden colour at the factory, so it is ready to use straight from the pack. The gluten-free status is confirmed by laboratory tests and declarations, which we provide on request. Write to sale@kataifi-factory.eu and we will send the current documents together with the product specification.

Taste, texture and handling tips

Because our gluten-free kataifi comes baked and golden, you can use it as a crunchy layer or topping straight away. Many recipes still add fat, syrup or a short time in the oven. The threads are fine and delicate, so a few habits help:

  • Handle gently. Pull the threads apart with your fingers instead of tearing them; work on a dry surface.
  • Use enough fat. Melted butter or ghee gives classic flavour and colour. If you need a dairy-free result, use a neutral oil or another fat that is safe for your gluten-free menu.
  • Watch the colour. When a recipe goes into the oven, bake only until golden and crisp; the threads are already baked and colour quickly. Ovens differ, so test a small tray first and note your time and temperature.
  • Keep it separate. Use dedicated trays, bowls, brushes and baking paper, and prepare the gluten-free batch before any wheat dough on the same day.

The last point matters most. A product made on a separate line only stays gluten-free on your plate if there is no cross-contact in your kitchen.

Storage and shelf life

Gluten-free kataifi keeps for 12 months in a cool, dry place. Keep the pack closed until use and close it tightly after opening so the threads do not absorb moisture or odours. Store it away from flour and other products that contain gluten.

Ideas for gluten-free kataifi

Classic desserts

Nests filled with pistachios or walnuts, rolls with syrup, small cups with cream and fruit: most kataifi desserts work with the gluten-free dough. Check that every other ingredient, from syrup to decoration, also fits a gluten-free menu.

Kunefe-style dessert

Two layers of buttered kataifi with a soft, mild cheese in the middle, baked until golden and finished with warm syrup. With gluten-free dough this popular dessert can stay on a gluten-free menu.

Dubai chocolate with gluten-free kataifi

The filling of Dubai-style chocolate bars combines toasted kataifi with pistachio cream. To make a gluten-free version, use gluten-free kataifi as it is or toast it briefly in fat, let it cool and mix it with a pistachio cream and chocolate that are declared gluten-free. Our ready-made Dubai chocolate filling also contains kataifi, so check the allergen information on its product page before you use it in a gluten-free product. For the full method, read our Dubai chocolate guide, and see our pistachio and nut creams.

Savoury dishes

Prawns wrapped in kataifi are a well-known starter. Wrap the prawns in thin threads, brush with fat and bake or fry until golden. The same works for fish fillets or cheese bites.
